Today I’m sharing with you one of my favorite go-to, quick, frugal meals. I love Korean Ground Beef and Rice for two main reasons: 1) it’s super fast to make (20 minutes to the table) and 2) my kids always eat it. Plus, it’s economical to boot (easily less than $10 for 4 servings)! I add a side of steamed broccoli and an apple to round it out and health it up.
I like to cook once and eat twice, so I double almost every meal I make to use for leftover lunches or dinners later in the week. This is the perfect, simple recipe to double – the beef freezes and reheats well.

Korean Ground Beef and Rice
1 pound ground beef
1 small onion, chopped
4 cloves of garlic, minced
¼ cup brown sugar
¼ cup soy sauce
1 Tbsp sesame oil
Pepper to taste
Red pepper flakes to taste
2 1/2 cups cooked rice (white or brown)
- Cook ground beef and onion until beef is cooked through and onions are translucent.
- Add minced garlic and cook another minute.
- Combine brown sugar, soy sauce, sesame oil, pepper and red pepper flakes.
- Pour sauce over ground beef mixture and cook 1 minute.
- Serve over cooked rice.
